Every pitmaster who looks like he is guessing is not guessing. He pokes it. Thick cuts, chicken thighs, a pork chop on a hot griddle: the only way to know is a fast probe, and this is the one that lives in the apron pocket.
There is no power button
Flip the probe out like a switchblade and it reads. Fold it shut and it is off. Set it down and it sleeps; pick it up and it wakes. You never find it dead because somebody left it on, and you never fumble for a button with a greasy hand.
The magnet is the other half
The back is magnetic. Between pokes it rides on the smoker door, the griddle hood, or the side of the truck, right where your hand goes. A thermometer you can find is the one you actually use.
Fast, sealed, right-side up
One-second reads mean the lid is open for one second. IP65 means grease and a rinse under the tap do not kill it. The backlit screen flips to read correctly however you hold it, and you can lock the reading before you pull the probe out.
The verdict
We own this one, and it is the one that gets grabbed. Buy one for the grill and one for the kitchen drawer.
Skip it if
You cook low and slow and want alarms. This is a poke-and-read tool, not a leave-in probe for a six-hour brisket.
